• 100 g whole milk coating
• 150 g butter
• 250 brown sugar
• 1 tsp vanilla sugar
• 1 pinch salt
• 2 eggs (size M)
• 2 tbsp whipping cream
• 450 g flour (type 405)
• 2 tbsp cocoa powder
• 2 tsp baking powder
• 75 g large-chopped hazelnuts
• 100 g ground almonds

Hazelnut-Almond Chocolate Cookies


1. Cut the chocolate into medium-sized cubes.

2. Cream the butter, sugar, vanilla sugar, and salt in a hand mixer using the whisk attachment. Mix together the eggs and cream, add them to the mixture, and stir.  Mix in the flour, cocoa, and baking powder and knead with the dough hook. Knead in the chocolate, hazelnuts, and almonds.

3. Place the dough on a baking sheet lined with parchment in large heaps. Place the sheets one by one in a preheated oven (electric cooker): 175 °C/ circulating air: 150 °C/ gas: Level 2) Bake for 18-20 minutes.

4. Remove from oven, place on a cooling rack, and allow to cool.
